Welcome to our Cookie Cake workshop 💗


This cookie cake is simple to make, however there are a few elements to prepare before the day of serving.
Also note that the cookie cake needs to be assembled with the cheesecake cream (minus the decorations) the day before serving.


 Suggested timetable

Day 1
• Make and bake the lemon shortbread cookie circles – the dough can be made and frozen for up to 3 months.
• Make the lemon cheesecake cream – this needs to be used fresh and cannot be chilled before piping.
• Assembling the cookie cake – the cookie cake needs to rest in the fridge overnight before decorating and serving.
• If making the liquid pearls, chill the oil overnight before making – these can also be made a week ahead.
• Swiss meringue kisses can be made the day before, or even months in advance as they store well.

• Chocolate decorations can be made prior to the day of decorating.
 

Day 2

• The cookie cake is best decorated just before serving.
