The Best Scone Recipe

I've always been in search of the best scone recipe. One that's easy to put together and is light and fluffy.

I also have a friend named Chris, who happens to be a master scone baker...so what's a girl gonna do?

Ask her for the recipe of course!

Sometimes people can be a little guarded when it comes to their recipes, but not Chris...she happily handed it over and I was surprised at how easy it was. 

Just cream, milk and flour!

Of course there are other recipes out there using butter, but I particularly hate rubbing butter into flour, so I was happy there would be none of that in this recipe. 

I actually used to make mine with cream & lemonade, and that was good too, but I find that I can whip this recipe up easier as I don't usually have lemonade on hand. 

With Chris's recipe and my tips...you'll have a dainty Devonshire tea on the table in no time! 🫖

 

 

Before you start...here's my tips to getting great results.

Making a good scone is quite easy. 

But...ya gotta know a few tricks to make sure they don't turn out like little golf balls! 

 

 🥣Mix the dough with a knife.

It may sound weird, but the method tells you to use a knife to mix the dough. What you're doing is cutting it instead of stirring or kneading. This helps to prevent the gluten from forming...which means your scones will be beautifully light and fluffy. (You've been warned👀)

 

🥣Don't over handle the dough.

Once you turn the dough out onto the bench, bring it together with your hands, but don't knead it as you would bread. You are just looking for it to hold together, it's better if it doesn't look perfectly smooth. 

 

🥣Use a cutter with a sharp edge.

If you can avoid it, don't use a glass to cut out your scones. Glasses have a rounded edge and they tend to push the sides of the dough down as you cut which results in flat scones. Use a scone cutter, or a cookie cutter with sharp edges so it cuts through the dough cleanly.

 

🥣Put the jam on first...then the cream. It's not acceptable to do it any other way! 😆

 

Scones

(Makes 16 depending on the size of your cutter)

Ingredients 

  • ​3 cups (450g) plain flour, plus a little extra for dusting (or use self raising flour and leave out the baking powder below)
  • 1 & 1/2 tablespoons baking powder
  • 1 cup (250ml) cream
  • 1 cup (250ml) milk, plus extra for brushing

 Method

  1. ​Preheat oven to 200°C / 180°C fan forced. Lightly dust a baking tray with flour.
  2. Sift the plain flour and baking powder together into a large bowl.
  3. Make a well in the centre. Add the milk & cream, then mix with a flat bladed knife until the mixture forms a soft dough and there is no dry flour visible.
  4. Turn the dough out onto a lightly floured surface. Knead gently until smooth (don't knead too much or your scones will be tough).
  5. Pat dough out until it's 2cm thick. Using a 5cm diameter round cutter, cut out rounds and place onto the floured tray 1cm apart, then brush tops with a little milk.
  6. Bake for 20 - 25 mins or until golden. 
  7. Transfer to a wire rack to cool. 

Serve with your favourite jam and a good dollop of double cream.

Best eaten on the day of baking.

Now invite some chums over, pull out the good china and have yourself a lovely tea party...you deserve it! 🫖
