Sticky Date Cake

Sticky Date Cake Recipe | brown cake on white saucer on timber bench

This Sticky Date Cake gets a lot of oohs and ahh's when I serve it up thanks to the sweetness of the dates and the gorgeous blend of spices.

It's lovely served simply as it is, but it can easily be made into a dessert by warming it and serving with ice cream or custard and some luscious caramel sauce.

 


STICKY DATE CAKE

INGREDIENTS

  • 300g plain flour
  • 2 cups chopped dried dates
  • 2 teaspoons baking powder
  • 2 teaspoons bi carb soda
  • 230g brown sugar
  • 3 eggs
  • 150g butter, softened
  • 155ml milk
  • 1 ½ teaspoons vanilla essence
  • 1 tablespoon fresh ginger, grated
  • ¼ teaspoon ground cloves
  • ¾ teaspoon of mixed spice
  • zest of one orange


Method

1. Prior to starting, soak the the chopped dates in boiling water for 1 hour, then drain until needed.

2. Preheat oven to 170°C / 150°C fan forced and line an 8” cake tin.

3. In a mixing bowl, cream the butter and sugar for approximately 3 minutes, or until the mixture is light and fluffy.

4. Add the eggs a little at a time, beating well after each addition.

5. In a separate bowl, add the flour, baking powder and spices whisking briefly to combine.

6. Add a third of the flour and half of the milk to the butter, sugar and egg mixture. Beat on low until just combined.

7. Add another third of the flour and the remainder of the milk. Beat until just combined before adding the remainder of the flour, folding this through by hand gently until all the ingredients are incorporated. 

8. Stir in the drained, chopped dates.

9. Pour the batter into the lined tin and bake for approximately 1 ½ hours or until a skewer comes out clean.

10. Allow to sit in the tin for 10 minutes then turn out onto a cake rack to cool completely.

Beautiful served at room temperature, or even better served warm with caramel sauce and double cream or ice cream.

Store in a sealed container in the fridge for up to 3 days.
