This Sourdough Discard Sandwich Bread is the bread you need to make if...

- You've got too much sourdough discard lurking in your fridge.
- You're short on time.
- You want a softer crusted loaf but still with that great sourdough taste.

Yep, this loaf meets all of the above criteria and when you're a busy person...sometimes you just have to skip the whole sourdough process and cheat!

 

Sourdough Discard Sandwich Bread

Ingredients

  • 100g unfed sourdough starter
  • 500g white bread flour
  • 250g lukewarm milk
  • 2 teaspoons salt
  • 7g instant dried yeast
  • 60g softened butter
  • 20g honey

Method

  1. Combine all the ingredients together into a bowl and mix with a spoon until it’s a shaggy dough.

  2. Turn the dough out onto your work surface then knead for 10 minutes or until the dough is smooth. You will notice the dough changes texture and starts to feel pillowy and elastic at this stage.

  3. Place the dough into an oiled bowl and cover with a tea towel or plastic. Leave for 40 minutes, or until it doubles in size. This could take shorter or longer depending on the temperature of your kitchen. If it’s warmer it will rise quicker, if it’s cooler, it can take longer.

  4. Turn the dough out onto your work surface and pat it out into a large rectangle.

  5. Roll the dough in on itself, tucking the sides in as you go until you have a smooth log.

  6. Carefully lift the dough and place into the prepared pan with the smooth side facing upwards.

  7. Cover loosely with a plastic bag, making sure the dough doesn’t touch the top as it rises.

  8. Leave for approximately 40 minutes or until it has doubled in size.

  9. Preheat your oven to 180°C (350°F).

  10. Once the dough has proved, brush the top with water then scatter sesame seeds over the top.

  11. Bake for 40 minutes.

  12. Remove from the oven then turn the bread out onto a cooling rack.

  13. Allow to cool completely before cutting.
