This Overnight Baked Berry Porridge is the best thing on a chilly morning.
When I think of porridge, I think of that ad that used to be on telly with the Granny in her fluffy dressing gown giving her grandkiddies a big cuddle whilst they eat their porridge.
Because that's what eating porridge does to you...it gives you a warm cuddle on the inside...π€
βThe best thing about this recipe is that you put it together the night before, then pop it in the oven while you drag the rest of the house out of bed to get ready for the day... even if that's just hanging around in your pj's & watching Netflix all day...no judgement here :)
Overnight Baked Berry Porridge
Ingredients
- 2 cups rolled oats
- 2 cups milk
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla
- 3 tablespoons (60g) melted butter
- 1.5 cups mixed berries (frozen is fine)
- 1/2 cup flaked almonds
Method
- Preheat oven 180°C/ 160°C fan forced.
- Place oats into a baking dish.
- Blend milk, eggs, honey, vanilla and melted butter then pour over the oats.
- Top with berries and flaked almonds.
- Bake for 20-30 mins or until just set in the centre.
- Top with extra berries and/or sliced banana and a little extra milk or yoghurt.
βTips
- You can use any kind of milk in this recipe.
- If you don't have any fresh or frozen berries on hand, you can add sultanas, fresh bananas or strained tinned fruit instead.
