Flourless Peanut Butter Cookies

If you're looking for something really quick to whip up, these Flourless Peanut Butter Cookies are it.
This is an old recipe of mine and those who've made it in the past told me they thought they were the 'BEST EVER' gluten free peanut butter bickies they had ever tried!
Even better than ones with wheat flour.
Really, I hear you say? Yep...really!
Flourless Peanut Butter Cookies
Ingredients
- 275g peanut butter (must be spreadable but not runny)
- If the peanut butter isn't salted, add a couple of pinches
- 150g brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 tsp bicarb
Method
- Preheat oven to 180°C / 160°C fan forced and line a baking tray with baking paper.
- Combine ingredients until well combined and drop teaspoon amounts of the mixture onto the baking tray spacing them around 5cm apart. Press down with a fork.
- Bake for 8 minutes the allow to sit for a couple of minutes on the pan, then transfer to a cooling rack to cool completely.
Storage
- Store in a sealed container at room temperature for up to 3 days.
- Cookies can be frozen for up to 3 months.
EAT - BE HAPPY - REPEAT
